Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add flour and stir to make a roux, cooking until golden brown.
  3. Add onion, bell pepper, celery, and garlic. Cook until softened.
  4. Stir in seafood stock and diced tomatoes.
  5. Add Cajun seasoning, salt, and pepper. Simmer for 15 minutes.
  6. Fold in the chopped lobster and heat through.
  7. Serve over rice and garnish with green onions.
