Ingredients

- 2 lobsters, cooked and chopped
- 1/2 cup butter
- 1/2 cup flour
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 2 cups seafood stock
- 1 can diced tomatoes
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add flour and stir to make a roux, cooking until golden brown.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Stir in seafood stock and diced tomatoes.
- Add Cajun seasoning, salt, and pepper. Simmer for 15 minutes.
- Fold in the chopped lobster and heat through.
- Serve over rice and garnish with green onions.
