Delicious lobster empanadas filled with tender lobster meat and spices.
Ingredients

- 1 cup cooked lobster meat, chopped
- 1/2 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 cup cilantro, chopped
- 1 package empanada dough
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, sauté onion, bell pepper, and garlic until soft.
- Add lobster meat, paprika, cumin, and cilantro. Mix well.
- Remove from heat and let cool.
- Roll out empanada dough and cut into circles.
- Place a spoonful of the lobster mixture in the center of each circle.
- Fold the dough over and seal the edges with a fork.
- Brush with beaten egg.
- Bake for 20 minutes or until golden brown.
Notes
- Serve with a dipping sauce of your choice.
- Use fresh lobster for best flavor.
