Delicious lobster empanadas filled with tender lobster meat and spices.


Ingredients

  • 1 cup cooked lobster meat, chopped
  • 1/2 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 cup cilantro, chopped
  • 1 package empanada dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, sauté onion, bell pepper, and garlic until soft.
  3. Add lobster meat, paprika, cumin, and cilantro. Mix well.
  4. Remove from heat and let cool.
  5. Roll out empanada dough and cut into circles.
  6. Place a spoonful of the lobster mixture in the center of each circle.
  7. Fold the dough over and seal the edges with a fork.
  8. Brush with beaten egg.
  9. Bake for 20 minutes or until golden brown.
