- 1 cup cooked lobster meat, chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder

- 2 large eggs

- 1/4 cup melted butter
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 2 tablespoons chives, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, cornmeal, baking powder, salt, and pepper.
- In another bowl, whisk eggs, milk, and melted butter.
- Add dry ingredients to wet ingredients and mix until combined.
- Fold in chopped lobster meat and chives.
- Pour batter into cupcake liners in a muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- In a bowl, mix cream cheese, sour cream, and lemon juice for frosting.
- Frost the cooled cupcakes and garnish with extra lobster and chives.
