Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cornmeal, baking powder, salt, and pepper.
  3. In another bowl, whisk eggs, milk, and melted butter.
  4. Add dry ingredients to wet ingredients and mix until combined.
  5. Fold in chopped lobster meat and chives.
  6. Pour batter into cupcake liners in a muffin tin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cupcakes cool completely.
  9. In a bowl, mix cream cheese, sour cream, and lemon juice for frosting.
