A delicious twist on the classic Cobb salad featuring succulent lobster.
Ingredients

- 1 cup cooked lobster meat, chopped
- 2 cups romaine lettuce, chopped
- 1 ripe avocado, diced
- 2 hard-boiled eggs, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese
- 1/4 cup cooked bacon, crumbled
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, avocado, lobster, eggs, tomatoes, blue cheese, bacon, and onion.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately on chilled plates.
Notes
- Make sure the lobster is fresh or properly thawed.
- You can substitute crab for lobster if desired.
- For a lighter version, reduce the amount of bacon and cheese.
