Ingredients

- 2 lobsters, cooked and shells reserved
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- 6 cups water
- Salt to taste
Instructions
- In a large pot, heat oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add tomato paste, thyme, and bay leaf. Mix well.
- Add lobster shells and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Strain the broth through a fine mesh sieve.
- Season with salt to taste.
Notes
- Use fresh lobster for the best flavor.
- Allow broth to cool before storing.
- Broth can be frozen for later use.
