Ingredients

  • 2 lobsters, cooked and shells reserved
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 6 cups water
  • Salt to taste

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add tomato paste, thyme, and bay leaf. Mix well.
  5. Add lobster shells and water. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Strain the broth through a fine mesh sieve.
  8. Season with salt to taste.
