Ingredients

  • 2 lobsters (about 1.5 pounds each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the lobsters for 8-10 minutes until cooked. Remove meat and set aside.
  2. In a large pot, melt butter over medium heat. Add onion, garlic, and carrot. Cook until softened.
  3. Stir in tomato paste and cook for 2 minutes.
  4. Add seafood stock and white wine. Simmer for 15 minutes.
  5. Blend the mixture until smooth. Return to pot.
  6. Stir in heavy cream and lobster meat. Heat through.
  7. Season with salt and pepper to taste. Serve hot.
