Description
A creamy and rich lobster bisque soup that highlights the flavors of fresh lobster.
Ingredients

- 2 lobsters (about 1.5 pounds each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 2 tablespoons tomato paste
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil the lobsters for 8-10 minutes until cooked. Remove meat and set aside.
- In a large pot, melt butter over medium heat. Add onion, garlic, and carrot. Cook until softened.
- Stir in tomato paste and cook for 2 minutes.
- Add seafood stock and white wine. Simmer for 15 minutes.
- Blend the mixture until smooth. Return to pot.
- Stir in heavy cream and lobster meat. Heat through.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use fresh lobster for the best flavor.
- For a smoother bisque, strain the soup before adding cream.
- Serve with crusty bread for a complete meal.
