Ingredients

- 2 lobsters, cooked and shelled
- 4 cups lobster stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onions, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in tomato paste and thyme.
- Add lobster stock and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Blend the soup until smooth.
- Return to pot and stir in cream and white wine.
- Add lobster meat and heat through.
- Season with salt and pepper.
- Serve hot.
