Creamy and rich lobster bisque made with fresh lobster and aromatic vegetables.
Ingredients

- 2 lobster tails
- 4 cups seafood stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Boil lobster tails in salted water for 8-10 minutes. Remove and let cool.
- Chop lobster meat and set aside.
- In a pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in white wine and cook until reduced by half.
- Add seafood stock, tomato paste, and thyme. Simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream and lobster meat. Heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Use fresh lobster for best flavor.
- Adjust cream quantity for desired richness.
- Can be made a day ahead and reheated.
