Ingredients

  • 2 lobster tails
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Boil lobster tails in salted water for 8-10 minutes. Remove and let cool.
  2. Chop lobster meat and set aside.
  3. In a pot, sauté onion, carrots, and celery until soft.
  4. Add garlic and cook for 1 minute.
  5. Stir in white wine and cook until reduced by half.
  6. Add seafood stock, tomato paste, and thyme. Simmer for 20 minutes.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in heavy cream and lobster meat. Heat through.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with fresh herbs if desired.
