- 2 lobsters (1.5 lbs each)
- 4 tablespoons butter
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 4 cups fish stock
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook lobsters in boiling water for 8-10 minutes.
- Remove meat from the shells and chop into small pieces.
- In a pot, melt butter over medium heat.
- Add onion, carrots, celery, and garlic. Sauté until soft.
- Pour in brandy and cook until reduced by half.
- Add fish stock and lobster shells. Simmer for 30 minutes.
- Strain the mixture and return to the pot.
- Stir in heavy cream and season with salt and pepper.
- Add lobster meat and heat through.
- Serve hot, garnished with parsley.
