A rich and creamy lobster bisque served elegantly.
Ingredients

- 2 lobsters, cooked and shelled
- 4 cups lobster stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 2 tablespoons tomato paste
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh chives, for garnish
Instructions
- Heat butter in a pot over medium heat.
- Add onion, garlic, and carrot. Sauté until soft.
- Stir in tomato paste and cook for 2 minutes.
- Add wine and reduce by half.
- Pour in lobster stock and simmer for 15 minutes.
- Add cream and return to a simmer.
- Blend the soup until smooth.
- Season with salt and pepper.
- Serve hot, garnished with lobster meat and chives.
Notes
- Use fresh lobsters for best flavor.
- Adjust cream quantity for desired thickness.
- Serve with crusty bread.
