Ingredients

  • 2 lobsters, cooked and shelled
  • 4 cups lobster stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Heat butter in a pot over medium heat.
  2. Add onion, garlic, and carrot. Sauté until soft.
  3. Stir in tomato paste and cook for 2 minutes.
  4. Add wine and reduce by half.
  5. Pour in lobster stock and simmer for 15 minutes.
  6. Add cream and return to a simmer.
  7. Blend the soup until smooth.
  8. Season with salt and pepper.
  9. Serve hot, garnished with lobster meat and chives.

Notes

  • Use fresh lobsters for best flavor.
  • Adjust cream quantity for desired thickness.
