Description

Lobster bisque is a creamy, flavorful soup made from lobster, vegetables, and spices.


Ingredients

  • 2 lobsters (about 1.5 pounds each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook lobsters in boiling water for about 10 minutes. Remove and cool.
  2. Extract meat from the lobsters and chop into small pieces.
  3. In a pot, sauté onion, carrots, celery, and garlic until soft.
  4. Add tomato paste and brandy, cooking for 2 minutes.
  5. Pour in seafood stock and bring to a simmer.
  6. Add lobster meat and heavy cream. Cook for 10 minutes.
  7. Blend the soup until smooth, then strain for a finer texture.
  8. Season with salt and pepper. Serve hot, garnished with parsley.
