Description
Lobster bisque is a creamy, flavorful soup made from lobster, vegetables, and spices.
Ingredients

- 2 lobsters (about 1.5 pounds each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook lobsters in boiling water for about 10 minutes. Remove and cool.
- Extract meat from the lobsters and chop into small pieces.
- In a pot, sauté onion, carrots, celery, and garlic until soft.
- Add tomato paste and brandy, cooking for 2 minutes.
- Pour in seafood stock and bring to a simmer.
- Add lobster meat and heavy cream. Cook for 10 minutes.
- Blend the soup until smooth, then strain for a finer texture.
- Season with salt and pepper. Serve hot, garnished with parsley.
Notes
- Use fresh lobsters for the best flavor.
- Adjust the thickness by adding more or less cream.
- Serve with crusty bread for a complete meal.
