Description

Ingredients

  • 1 lb lobster meat
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup carrots, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onion, celery, and carrots until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in tomato paste and cook for 2 minutes.
  4. Add white wine and reduce by half.
  5. Add seafood stock and thyme, then bring to a boil.
  6. Simmer for 20 minutes.
  7. Blend the mixture until smooth.
  8. Return to heat and stir in heavy cream and lobster meat.
  9. Season with salt and pepper.
  10. Serve hot.

Notes

  • Use fresh lobster for best flavor.
  • Can be made ahead and reheated.
