A delicious lobster baked potato topped with creamy lobster filling and cheese.

- 2 large baking potatoes
- 1 cup cooked lobster meat, chopped
- 1/2 cup sour cream
- 1/4 cup shredded cheddar cheese
- 2 tablespoons butter
- 1 tablespoon chives, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While the potatoes bake, mix lobster meat, sour cream, cheddar cheese, butter, chives, salt, and pepper in a bowl.
- Once the potatoes are done, cut them open and fluff the insides with a fork.
- Spoon the lobster mixture into each potato.
- Return the stuffed potatoes to the oven for 10 minutes.
- Serve hot and enjoy.
Notes
- Make sure the lobster meat is fresh or properly cooked.
- You can substitute sour cream with Greek yogurt for a healthier option.
- Add extra cheese on top for a cheesier flavor.
