Description

A delicious lobster baked potato topped with creamy lobster filling and cheese.


Ingredients

  • 2 large baking potatoes
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon chives, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. While the potatoes bake, mix lobster meat, sour cream, cheddar cheese, butter, chives, salt, and pepper in a bowl.
  5. Once the potatoes are done, cut them open and fluff the insides with a fork.
  6. Spoon the lobster mixture into each potato.
  7. Return the stuffed potatoes to the oven for 10 minutes.
  8. Serve hot and enjoy.
