Ingredients

  • 4 ears of corn, husked and halved
  • 1 lb baby potatoes, halved
  • 1/4 cup butter, melted
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil water and cook the potatoes for 10 minutes.
  3. Add corn to the pot and cook for another 5 minutes.
  4. Drain the potatoes and corn.
  5. In a large baking dish, combine the lobsters, potatoes, and corn.
  6. In a bowl, mix melted butter, garlic, lemon juice, salt, and pepper.
  7. Pour the butter mixture over the lobster and vegetables.
  8. Cover the dish with aluminum foil.
  9. Bake for 30 minutes.
  10. Remove foil and bake for an additional 10 minutes for a nice finish.
  11. Garnish with fresh parsley before serving.
