Ingredients

- 1 pound lobster meat, cooked and chopped
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1/4 cup celery, finely chopped
- 1/4 cup red bell pepper, finely chopped
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
- Crackers or toast points for serving
Instructions
- In a bowl, combine the lobster meat, mayonnaise, lemon juice, and Dijon mustard.
- Add the celery, red bell pepper, salt, and pepper. Mix well.
- Stir in fresh parsley.
- Chill in the refrigerator for 30 minutes.
- Serve on crackers or toast points.
