- 1 lobster (about 1.5 pounds)
- 1 cup rice
- 2 cups seafood stock
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Boil the lobster for about 8-10 minutes until cooked.
- Remove the meat from the lobster and chop it into pieces.
- In a pot, heat olive oil and sauté onion, garlic, and bell pepper until soft.
- Add rice and stir for 2 minutes.
- Pour in seafood stock and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in lobster meat and cook for another 5 minutes.
- Season with paprika, salt, and pepper.
- Garnish with fresh parsley before serving.
