- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and slice them into 1/4-inch thick rounds.
- In a bowl, toss the potato slices with olive oil, salt, and pepper.
- Arrange the slices on a baking sheet in a single layer.
- Bake for 25-30 minutes until golden and crispy.
- Remove from the oven and sprinkle cheese and bacon over the top.
- Return to the oven for an additional 5 minutes until cheese melts.
- Top with sour cream and green onions before serving.
