Instructions

  1. Rinse the lima beans and black-eyed peas under cold water.
  2. Soak the beans overnight in water.
  3. Drain the beans and place them in a large pot.
  4. Add 4 cups of fresh water, onion, garlic, salt, pepper, and olive oil.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add smoked paprika and stir well.
  7. Cook for an additional 30 minutes until beans are tender.
