Ingredients

- 1 cup dried lima beans
- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
Instructions
- Rinse the lima beans and black-eyed peas under cold water.
- Soak the beans overnight in water.
- Drain the beans and place them in a large pot.
- Add 4 cups of fresh water, onion, garlic, salt, pepper, and olive oil.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add smoked paprika and stir well.
- Cook for an additional 30 minutes until beans are tender.
Notes
- Soaking beans overnight improves texture.
- Adjust seasoning to taste.
- Serve hot or at room temperature.
