Description

A flavorful lemon herb roasted whole chicken.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the cavity with lemon halves.
  5. Place the chicken in a roasting pan.
  6. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.
