- 2 cups leftover black-eyed peas
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add garlic and cumin, cook for 1 minute.
- Add black-eyed peas, stir to combine.
- Season with salt and pepper.
- Cook for about 5-7 minutes until heated through.
- Garnish with fresh parsley before serving.
