  • 1/2 cup sugar-free chocolate chips

Instructions

  1. In a mixing bowl, combine peanut butter, coconut oil, powdered erythritol, and vanilla extract.
  2. Mix until smooth and well combined.
  3. Refrigerate the mixture for 30 minutes to firm it up.
  4. Once firm, scoop out small balls and place them on a baking sheet lined with parchment paper.
  5. Freeze the balls for 15 minutes.
  6. In a separate bowl, melt the sugar-free chocolate chips.
  7. Dip each peanut butter ball into the melted chocolate and return to the baking sheet.
  8. Refrigerate until the chocolate hardens.
