Description

A hearty and flavorful dish made with black-eyed peas and smoked turkey, cooked quickly in an Instant Pot.


Ingredients

  • 1 pound black-eyed peas
  • 1 smoked turkey leg
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 bay leaves

Instructions

  1. Rinse the black-eyed peas and set aside.
  2. Turn on the Instant Pot and select the sauté function.
  3. Add onion and garlic, sauté until soft.
  4. Add smoked turkey leg, black-eyed peas, chicken broth, salt, pepper, paprika, and bay leaves.
  5. Close the lid and set the Instant Pot to manual high pressure for 15 minutes.
  6. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  7. Remove the turkey leg, shred the meat, and return it to the pot.
  8. Stir well and serve hot.

Notes

  • Soak the black-eyed peas overnight for a softer texture.
  • Adjust seasoning to taste.
  • Serve with cornbread for a complete meal.
