Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. Add the peas, water, onion, garlic, salt, pepper, paprika, and bay leaf to the Instant Pot.
  3. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 15 minutes.
  5. Allow natural release for 10 minutes, then quick release any remaining pressure.
  6. Remove the bay leaf and serve.

Notes

  • Soaking peas is not necessary for this recipe.
  • Adjust spices to taste.
  • Store leftovers in an airtight container.
