Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt to taste
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. Set the Instant Pot to sauté mode and add the onion and garlic. Cook until soft.
  3. Add the black-eyed peas, vegetable broth, smoked paprika, cumin, bay leaf, and salt.
  4. Close the lid and set the valve to sealing. Cook on high pressure for 15 minutes.
  5. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  6. Remove the bay leaf and serve warm.
