A simple and delicious recipe for vegan black-eyed peas cooked in an Instant Pot.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt to taste
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- Set the Instant Pot to sauté mode and add the onion and garlic. Cook until soft.
- Add the black-eyed peas, vegetable broth, smoked paprika, cumin, bay leaf, and salt.
- Close the lid and set the valve to sealing. Cook on high pressure for 15 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Remove the bay leaf and serve warm.
Notes
- You can adjust the spices to your preference.
- Serve with rice or cornbread for a complete meal.
- Store leftovers in the refrigerator for up to 5 days.
