A simple recipe for making black-eyed peas in an Instant Pot without soaking.
Ingredients

- 1 cup black-eyed peas
- 4 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- Add all ingredients to the Instant Pot.
- Seal the lid and set the pressure valve to sealing.
- Cook on high pressure for 30 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Remove the bay leaf and serve.
Notes
- Adjust seasoning to taste.
- Can add ham or bacon for extra flavor.
- Store leftovers in the fridge for up to 5 days.
