Delicious pumpkin pie cupcakes that are easy to make and perfect for fall.
Ingredients

- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, and vegetable oil.
- Add eggs one at a time, mixing well.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the pumpkin mixture.
- Fill cupcake liners 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container.
- Top with whipped cream if desired.
