Instructions
- Rinse the black eyed peas under cold water.
- In a pot, combine black eyed peas and water. Bring to a boil.
- Add onion, garlic, salt, black pepper, paprika, and bay leaf.
- Reduce heat and simmer for 45 minutes or until peas are tender.
- Stir in olive oil and cook for an additional 5 minutes.
- Remove bay leaf before serving.
