Scale
  • 1 cup dried black eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 bay leaves
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black eyed peas and soak them in water overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft.
  4. Add soaked peas, water, ham hock, salt, black pepper, cayenne pepper, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour.
  6. Remove the ham hock and let it cool; shred any meat and return it to the pot.
  7. Adjust seasoning as necessary and serve hot.

Notes
