- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock

- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas and soak them in water overnight.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add soaked peas, water, ham hock, salt, black pepper, cayenne pepper, and bay leaves.
- Bring to a boil, then reduce heat and simmer for about 1 hour.
- Remove the ham hock and let it cool; shred any meat and return it to the pot.
- Adjust seasoning as necessary and serve hot.
Notes
- Soaking peas overnight reduces cooking time.
- For a vegetarian version, omit the ham hock and use vegetable broth.
- Serve with cornbread for a traditional meal.
