Ingredients

- 2 lobsters, cooked and shelled
- 4 cups lobster stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Melt butter in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until soft.
- Pour in white wine and cook for 2 minutes.
- Add lobster stock and bring to a simmer.
- Stir in cooked lobster meat.
- Blend the mixture until smooth.
- Return to the pot, add cream, and heat through.
- Season with salt and pepper.
- Serve hot, garnished with chives.

- Adjust cream based on desired richness.
- Store leftovers in the refrigerator for up to 3 days.
