Instructions
- Wash and sort the black eyed peas.
- Soak the peas in water overnight.
- Drain and rinse the peas.

- Simmer for 30 minutes.
- Prepare jars and lids for canning.
- Fill jars with peas and cover with cooking liquid.
- Seal jars and process in a pressure canner for 90 minutes.
- Let jars cool and check seals before storing.
