Ingredients

  • 1 cup black-eyed peas
  • 4 cups collard greens, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add soaked peas and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add chopped collard greens and cook for an additional 15 minutes.
  8. Season with salt and pepper to taste.
