Ingredients

- 1 cup black-eyed peas
- 4 cups collard greens, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add soaked peas and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add chopped collard greens and cook for an additional 15 minutes.
- Season with salt and pepper to taste.
Notes
- Serve hot with cornbread.
- Can substitute collard greens with kale.
- For extra flavor, add smoked paprika.
