Description

Hoppin’ John is a traditional Southern dish made with black-eyed peas, rice, and spices.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 4 cups water
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion, bell pepper, and garlic; sauté until soft.
  5. Add soaked peas, water, salt, black pepper, and cayenne pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Add rice and stir well.
  8. Cover and cook for 20 minutes or until rice is tender.
  9. Remove from heat and let sit for 5 minutes before serving.

Notes

  • Serve with cornbread for a complete meal.
  • For flavor, add diced ham or sausage.
  • Leftovers can be stored in the refrigerator for up to 3 days.
