Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas, rice, and spices.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse peas.
- In a pot, heat olive oil over medium heat.
- Add onion, bell pepper, and garlic; sauté until soft.
- Add soaked peas, water, salt, black pepper, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add rice and stir well.
- Cover and cook for 20 minutes or until rice is tender.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Serve with cornbread for a complete meal.
- For flavor, add diced ham or sausage.
- Leftovers can be stored in the refrigerator for up to 3 days.
