A hearty and flavorful soup made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas, soaked overnight
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a large pot, sauté onion, garlic, and bell pepper until soft.
- Add black-eyed peas, rice, vegetable broth, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
Notes
- Serve with cornbread for a complete meal.
- Store leftovers in the fridge for up to 3 days.
