- 1 cup black-eyed peas
- 1/2 cup rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Soak black-eyed peas overnight.
- In a pot, sauté onion and bell pepper until soft.
- Add garlic and cook for another minute.
- Add soaked peas, rice, broth, thyme, and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
