Ingredients

- 1 cup cooked rice
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped

- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine black-eyed peas and cooked rice.
- Add diced bell pepper, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil and apple cider vinegar.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
