A classic Southern dish made with black-eyed peas and sausage.
Ingredients

- 1 cup black-eyed peas
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 cups cooked rice
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a large pot, sauté the sausage, onion, and garlic until the onion is translucent.
- Add the soaked black-eyed peas, chicken broth, salt, pepper, and paprika to the pot.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Stir in the cooked rice and heat through before serving.
Notes
- Serve with cornbread for a complete meal.
- For extra flavor, add a bay leaf while cooking.
- This dish is traditionally eaten on New Year’s Day for good luck.
