Description

A quick and easy recipe for Hoppin’ John using an Instant Pot.


Ingredients

  • 1 cup dried black-eyed peas
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 cup long-grain rice
  • Salt and pepper to taste

Instructions

  1. Rinse the black-eyed peas and soak them for at least 4 hours.
  2. Set the Instant Pot to sauté mode and heat the olive oil.
  3. Add the onion and bell pepper, cooking until softened.
  4. Add the garlic, smoked paprika, and cayenne pepper, stir for 1 minute.
  5. Add the soaked peas and vegetable broth, then stir.
  6. Close the lid and set to high pressure for 15 minutes.
  7. After cooking, allow for natural release for 10 minutes, then quick release remaining pressure.
  8. Add the rice, stir, and close the lid again.
  9. Set to high pressure for another 6 minutes.
  10. Release pressure, fluff with a fork, and season with salt and pepper.
