A quick and easy recipe for Hoppin’ John using an Instant Pot.
Ingredients

- 1 cup dried black-eyed peas
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 cup long-grain rice
- Salt and pepper to taste
Instructions
- Rinse the black-eyed peas and soak them for at least 4 hours.
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the onion and bell pepper, cooking until softened.
- Add the garlic, smoked paprika, and cayenne pepper, stir for 1 minute.
- Add the soaked peas and vegetable broth, then stir.
- Close the lid and set to high pressure for 15 minutes.
- After cooking, allow for natural release for 10 minutes, then quick release remaining pressure.
- Add the rice, stir, and close the lid again.
- Set to high pressure for another 6 minutes.
- Release pressure, fluff with a fork, and season with salt and pepper.
Notes
- Soaking beans helps reduce cooking time.
- Adjust spices to your taste.
- Serve with cornbread for a complete meal.
