Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Soak black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and green bell pepper. Cook until soft.
- Add soaked peas, chicken broth, salt, black pepper, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in rice and cover. Cook until rice is tender.
- Serve hot.
Notes
- Use smoked sausage for extra flavor.
- Serve with cornbread for a complete meal.
