Description

Instructions

  1. Rinse and soak the black-eyed peas overnight.
  2. Drain peas and place in a pot with water. Bring to a boil.
  3. Add ham hock, onion, bell pepper, garlic, salt, and peppers.
  4. Simmer for 1 hour until peas are tender.
  5. Remove ham hock and shred meat if desired.
  6. Add rice to the pot and stir well.
  7. Cover and simmer for another 20 minutes until rice is cooked.
  8. Serve warm with a sprinkle of green onions.
