Description
A traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 smoked ham hock or 1 cup diced ham
Instructions
- Rinse and soak the black-eyed peas overnight.
- Drain peas and place in a pot with water. Bring to a boil.
- Add ham hock, onion, bell pepper, garlic, salt, and peppers.
- Simmer for 1 hour until peas are tender.
- Remove ham hock and shred meat if desired.
- Add rice to the pot and stir well.
- Cover and simmer for another 20 minutes until rice is cooked.
- Serve warm with a sprinkle of green onions.
Notes
- Use fresh black-eyed peas for better flavor.
- Adjust spices to your taste.
- Serve with cornbread for a complete meal.
