Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon olive oil
- 1 smoked sausage, sliced (optional)
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Add black-eyed peas, rice, chicken broth, salt, pepper, and bay leaf.
- If using, add sliced sausage.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes until rice is cooked.
- Remove bay leaf before serving.
Notes
- Serve with cornbread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Adjust seasoning to taste.
