Description

Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 smoked sausage, sliced (optional)

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic; sauté until soft.
  5. Add black-eyed peas, rice, chicken broth, salt, pepper, and bay leaf.
  6. If using, add sliced sausage.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 30-40 minutes until rice is cooked.
  9. Remove bay leaf before serving.

Notes

  • Serve with cornbread for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
