Description

Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Instructions

  1. Soak black-eyed peas overnight.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, bell pepper, and garlic. Sauté until soft.
  4. Add soaked black-eyed peas and chicken broth. Bring to a boil.
  5. Stir in rice, salt, and spices. Reduce heat to low.
  6. Cover and simmer for 20-25 minutes until rice is cooked.
  7. Fluff with a fork and serve warm.
