Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 tablespoon olive oil
Instructions
- Soak black-eyed peas overnight.
- Heat olive oil in a pot over medium heat.
- Add onion, bell pepper, and garlic. Sauté until soft.
- Add soaked black-eyed peas and chicken broth. Bring to a boil.
- Stir in rice, salt, and spices. Reduce heat to low.
- Cover and simmer for 20-25 minutes until rice is cooked.
- Fluff with a fork and serve warm.
Notes
- Serve with cornbread for a complete meal.
- Leftovers can be stored in the fridge for up to three days.
