Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Form dough into balls and place them on a baking sheet.
  7. Make a thumbprint in the center of each ball.
  8. In a separate bowl, mix ricotta, honey, and pistachios.
  9. Fill each thumbprint with the ricotta mixture.
