Ingredients
Scale
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 cup chopped kale
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and salt, reduce heat, and cover.
- Cook for 15 minutes or until liquid is absorbed.
- In a skillet, heat olive oil and add kale.
- Sauté until wilted, about 3 minutes.
- Add quinoa, walnuts, and cranberries to the skillet.
- Mix well and season with pepper.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Substitute spinach for kale if desired.
