Ingredients
Scale
- 1 cup of quinoa
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of mixed vegetables (bell peppers, broccoli, carrots)
- 1/2 cup of chickpeas
- 1 tablespoon of lemon juice
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa and salt to boiling water.
- Reduce heat and cover, simmer for 15 minutes.
- In a pan, heat olive oil and sauté mixed vegetables until tender.
- Add chickpeas and cook for another 5 minutes.
- Combine quinoa, vegetables, and lemon juice in a bowl.
- Toss well and serve.
Notes
- For added flavor, season with herbs.
- Adjust vegetable types based on preference.
- Can be served warm or cold.
