Ingredients

- 1 ham bone
- 6 cups water
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 potatoes, cubed
- 1 cup green beans, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, place the ham bone and add water.
- Bring to a boil and reduce heat to simmer for 30 minutes.
- Add onion, carrots, and celery. Cook for 10 minutes.
- Add potatoes, green beans, garlic, thyme, and bay leaf.
- Simmer for 1 hour or until vegetables are tender.
- Remove the ham bone, shred any remaining meat, and return it to the pot.
- Season with salt and pepper before serving.
