Description

Ingredients

  • 1 ham bone
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, celery, and garlic until soft.
  2. Add the ham bone, chicken broth, bay leaves, thyme, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the ham bone, shred the meat, and return it to the pot.
  5. Add the white beans and simmer for an additional 30 minutes.
  6. Remove bay leaves and serve hot.
