Description
A hearty ham bone soup with vegetables and beans.
Ingredients

- 1 ham bone
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 can (15 oz) white beans, drained and rinsed
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, celery, and garlic until soft.
- Add the ham bone, chicken broth, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the ham bone, shred the meat, and return it to the pot.
- Add the white beans and simmer for an additional 30 minutes.
- Remove bay leaves and serve hot.
Notes
- Use leftover ham for added flavor.
- Adjust seasoning according to taste.
- Can be refrigerated for up to 3 days.
