Description
A hearty dish made with ham and black-eyed peas cooked in a crock pot.
Ingredients

- 1 pound black-eyed peas, soaked
- 2 cups diced ham
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon thyme
- 2 bay leaves
Instructions
- Drain and rinse the black-eyed peas.
- In the crock pot, combine black-eyed peas, ham, onion, garlic, chicken broth, black pepper, salt, thyme, and bay leaves.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Remove bay leaves before serving.
Notes
- Soaking peas overnight reduces cooking time.
- Add more broth for a soupier consistency.
- Serve with cornbread for a complete meal.
