Description
A healthy and flavorful Greek dish made with black-eyed peas.
Ingredients

- 1 cup black-eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon oregano
- Salt to taste
- Pepper to taste
Instructions
- Soak black-eyed peas in water overnight.
- Drain and rinse peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrot and bell pepper, cook for 5 minutes.
- Add black-eyed peas, diced tomatoes, oregano, salt, and pepper.
- Cover with water and bring to a boil.
- Reduce heat and simmer for 30 minutes or until peas are tender.
- Serve warm.
Notes
- Adjust spices to your taste.
- Serve with crusty bread.
- Can be made ahead and stored in the fridge.
