Ingredients

Instructions

  1. Soak black-eyed peas in water overnight.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add carrot and bell pepper, cook for 5 minutes.
  6. Add black-eyed peas, diced tomatoes, oregano, salt, and pepper.
  7. Cover with water and bring to a boil.
  8. Reduce heat and simmer for 30 minutes or until peas are tender.
  9. Serve warm.
