Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, combine black-eyed peas and water. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until tender.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic. Sauté until soft.
  6. Add cooked peas, salt, pepper, and oregano. Stir well.
  7. Cook for an additional 5 minutes.
