Ingredients

- 2 cups gluten free flour
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together gluten free flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream together brown sugar, molasses, and butter.
- Add the egg to the sugar mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Roll dough into small balls and place them on a baking sheet.
- Bake for 10-12 minutes or until edges are firm.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container.
- For extra spice, add more ginger or cinnamon.
- These cookies can be decorated with icing.
